Stage 1 is for Santoku and other 15 degree angles then it follows Stage 3 to polishStage 2 for serrated knives, no need for stage 3 for polish
Use gentle swipes. Use 3 to 5 swipes for each stage and your basically done.

ReplyDeleteAlso wondered whether the swipes should be always in the same direction? Like, pulling swipes, versus pushing strokes, or back and forth? I don't know how the sharpener works, exactly, but I seem to recall that other manual knife-sharpening techniques require single-direction strokes instead of "sawing" back and forth.

DeleteI just bought the chef's diamond hone model 436-3 sharpener and my knives are still very dull. I followed the instructions to do strokes back and forth motion on stage 2 then to step 3 to hone. Still not sharp.

From memory, so I might be wrong, stage 1 & 2 is 20 - 25 passes followed by 3-5 stage 3 passes.
ReplyDeleteYes, Jeff you are correct. According to the manual, the number of passes/strokes depends on how sharp/dull your blade is. The strokes should be in "sawing-type motion" counted in pairs - back & forth.
DeleteHere's a summary of the general recommendation:
- S1 & S2: 10-20+ strokes @ 4-5 lbs (downward force)
- S3: 2-5 strokes @ 3-4 lbs

I love this knife sharpener. However one of the blades (with square teeth) simple fell out. How can I get it repaired, if at all. I removed the screw in the bottom of the unit, but it did not allow me to see the inner workings of the knife sharpener; so I replaced the screw. Please help. Thank you,
